Trained taste test panelists describe sensory factors of beef from Rarámuri Criollo crossbreds, including visual appearance, in mouth texture, flavor, and odor of the beef. This helps to determine consumer acceptability of the meat.

Grass finishing beef cattle is less common than the more conventional grain finishing at commercial feedlots. There are grass fed beef producers and grass fed beef retailers throughout the Southwest and Southern Plains.

There are three main supply chains for cattle from the Southwest: grain finishing in the Southern Plains, grass finishing in the Northern Plains, or grass finishing in the Southwest. Each supply chain has different total costs and timelines as well as environmental impacts including water, carbon, energy, and nitrogen footprints. These impacts also vary based on the breed of cattle being produced.
